Potato Cheese Soup

onions, minced

1 1/2 cs

celery, chopped

1 c

carrots, chopped

3 cs

potatoes, diced

3/4 c

butter

1 1/2 cs

flour

1 1/2 qts

half and half

1 c

cheese (or more if you like)

3/4 t

black pepper

2 1/4 ts

salt

3/4 t

sugar


NOTES

  • This recipe was originally my Grandpa Bob's clam chowder that my mom adapted because her kids hated clams. Sometimes I add broccoli to this to make broccoli cheese soup. I have used skim milk, whole milk and 1% milk in place of half and half, depends on what I have on hand. It is easily adaptable.
