(approx. 2 lbs.)  well-trimmed, boneless, skinless chicken thighs (remove any visible fat)

1 cup

low-sodium soy sauce

1/2 cup

packed brown sugar

1/2 cup

water

2 tsp

grated fresh ginger (or more to your liking)

2 cloves

minced garlic

1/2 tsp

sambal oelek-chili paste (or more or less to your liking)

1/4 tsp

ground black pepper

1 tbsp

cornstarch, dissolved in 1-2 TBS cold water

sliced green onions and toasted sesame seeds, for garnish, if desired
