4 Easy Rotisserie Chicken Dinners

rotisserie chicken breasts, shredded

frozen peas and carrots

small potato, peeled and chopped

premade pie crust

PREPARATION

. Preheat oven to 400ºF (200ºC).

. Melt butter in a cast-iron skillet over medium-high heat.

. Add in the flour and stir until bubbling.

. Whisk in the milk until smooth, then add chicken, frozen peas and carrots, potato, and cream. Stir until fully mixed and bubbling.

. Drape pie crust over the top of the skillet and cut 4 venting holes in the center.

. Bake for 30-35 min, or until crust is golden brown. Carefully remove from the oven.

Chicken Parm MeltsServings:

INGREDIENTS

rotisserie chicken

1 cup

marinara sauce

slices bread, toasted

1 cup

shredded mozzarella

PREPARATION1. Preheat oven to 350ºF (180ºC) and line a sheet tray with parchment paper.

. Debone, remove skin, and shred rotisserie chicken.

. Mix chicken with marinara sauce.

. Line toasted bread up on the sheet tray and evenly top with chicken mixture.

. Sprinkle with mozzarella and bake for 5-10 minutes or until it is heated through and the cheese on top is melted.

Cheesy Chicken Potato SkinsServings:

INGREDIENTS4 russet potatoes

Oil

breasts shredded chicken

1 1/2 cups

cheddar

4 oz

cream cheese

1/2 cup

cooked spinach, cooked

Salt

Pepper

PREPARATION1. Preheat oven to 400ºF (200ªC).

. Brush potatoes with oil and sprinkle with salt and pepper.

3

. With a fork, poke several sets of holes on the front and back of the potato.

. Bake for 40-45 minutes or until inside is cooked.

. Once potatoes are cooked and cool enough to handle, slice down the center lengthwise, and, using a spoon, scoop out the centers to form a bowl.

. In a large bowl, combine the chicken, scooped out potato, ½ cup of cheddar, cream cheese, and spinach. Stir until combined.

. Evenly distribute the filling between the potato skins and sprinkle the tops with the remaining cheddar.

. Bake for 15 minutes, or until the cheese is melted.
