large chicken thighs, bone-in, skin-on

kosher salt and freshly ground pepper

slices bacon, cut in 1-inch pieces

2 cups

Brussels sprouts, trimmed and quartered

medium Fuji* apple, cored and cut in 8-10 slices

1 tbsp

red wine vinegar

1/4 cup

apple juice

*Note: you can use any apple, really. I just think Fuji works the best.
