shredded or diced chicken, you can use a rotisserie chicken, I used leftover chicken from earlier in the week. It's about 4 large chicken breasts. Omit to keep dish vegetarian!

small container cottage cheese

shredded mozzarella

mushrooms, sliced
2 oz
containers of frozen spinach, thawed and squeezed in a towel to remove all moisture
Lasagna noodles (I used the no boil noodles because they were on sale, and I loved them!)
Sauce:
1/4 cup
butter

small onion, diced

garlic cloves, minced
1/2 cup
flour
3 1/2 cups
milk (more if needed)
1/2 tsp
dried oregano
2 tbsp
Fresh Basil
1/4 tsp
Nutmeg
Salt and Pepper
1 cup
grated Parmesan, plus more to top lasagna
