INGREDIENTS
-1 sweet potato, baked, skin removed
-1/3 block of extra firm tofu (from a 14 oz package)
-1 Tbsp. tahini
-2 tsp. maple syrup
-1 tsp. minced rosemary
-1 tsp. paprika
-1 clove garlic, minced
-A few pinches of salt
-A few grinds of pepper
-1/2 cup panko (whole wheat if you kind find them!) (to roll the patties in before baking)
-Buns (or english muffins, or slider rolls)
-Any desired toppings - I used sprouts, thinly sliced red onion, spinach, and a mayo/tahini/lemon spread
