bread crumbs - Panko crumbs work well (too)

coriander

1 1/2 tsp

1/2 tsp

black pepper

1 1/2 tsp

Chinese Five Spice (see notes)

chicken breasts - skinned and boned

1/2 cup

peanut or canola oil

For the Mango Salsa:

mangos (peeled, pitted and chopped)

cherry tomatoes - cut in half

1/2 cup

sweet yellow onion - diced

chipotle peppers in adobo sauce or poblano chile pepper - diced

red or yellow bell pepper - diced

fresh lime juice

1 tbsp

canola oil

coriander
