cherry tomatoes
1/2 cup
fresh mozzarella, sliced or chopped
1 tbsp
fresh basil, chopped
2 tbsp
olive oil
kosher salt and pepper
NOTES
Served this with cubed potatoes drizzled with olive oil, salt and pepper on the same pan. Go easy on the pesto. Flip the potatoes and broil for 2-3 minutes so chicken skin gets crispy and potatoes get cooked on both sides.
