Keto Pesto-stuffed Chicken Thighs

pesto

salt

1/4 tsp

black pepper

1 tbsp

olive oil

1 1/2 cups

cherry tomatoes

1/2 cup

fresh mozzarella, sliced or chopped

1 tbsp

fresh basil, chopped

2 tbsp

olive oil

kosher salt and pepper


NOTES

  • Served this with cubed potatoes drizzled with olive oil, salt and pepper on the same pan. Go easy on the pesto. Flip the potatoes and broil for 2-3 minutes so chicken skin gets crispy and potatoes get cooked on both sides.
