INGREDIENTS

ready made or homemade pastry to cover the bottom and sides of your chosen pan

large onion, peeled, quartered and cut in eighths

1 cup

mushrooms, halved (or quartered if large)

peppers, assorted colours if possible, de-seeded, sliced and cut in roughly one inch squares

small to medium zucchini, cut in half and then in half moons, roughly half an inch thick

mild olive oil

3 tbsp

passata or plain tomato sauce

2 tbsp

basil pesto, homemade or store bought

to 2 handfuls of a meltable Mozzarella style vegetarian cheese

salt and freshly ground pepper
