we use clarified butter instead of canola oil and cook at 350 F on cast iron skillet with a lid for the first 5 min and uncovered for the next 4-5 min

Very good! These were the winner of our head-to-head hash brown cook off--they aren't fancy, just delicious! We used clarified butter vs canola oil and cooked covered for the first 5 min.
