Crimini Mushrooms (aka baby bellas) (chopped)

1/4 cup

Water

Bell Peppers (sliced)

crowns Broccoli (chopped well)

1 1/2 cups

frozen Corn

1 tsp

ground Cumin

1 tsp

Chipotle Chili Powder (this makes it spicy, replace with regular chili powder if you don’t like spice)

3/4 cup

Cheddar Cheese shred then measure

Salt and Pepper (to taste)
