Oatmeal Peanut Butter Balls

INGREDIENTS

1 cup

oats (I’ve used old-fashion and quick cooking – they both taste great)

1/4 cup

ground flax meal

1/4 cup

sliced almonds, chopped

1 tsp

cinnamon (I like to use more)

1 pinch

salt

1/4 cup

plus 2 TBS creamy peanut butter (I like to use all natural)

1/4 cup

plus 1 TBS honey

1/4 tsp

vanilla extract or almond extract

2 tbsp

mini-chocolate chips (let’s not kid ourselves…you’ll probably want to add more)

1/4 cup

ground peanuts to roll the balls in (you could also use almonds)
