INGREDIENTS

applesauce (homemade or a clean store bought version)

1 tsp
vanilla (leave out for SCD)
1 tbsp
raw, local honey (optional if you like a sweeter muffin, I usually leave it out)
8 oz
(about 2 cups) of blanched almond flour
2 tbsp
coconut flour
1/4 tsp
sea salt
1/2 tsp
baking soda
2 tsp
cinnamon
1 tsp
apple cider vinegar

heaping cup of shredded zucchini (Place in a clean, dry dish towel and squeeze out as much liquid as possible.)

medium size organic apple, diced into 1/4 inch chunks (I did not peel mine, but feel free to peel before dicing if prefer)
