Eggs in Purgatory

extra virgin olive oil

large onion, small dice

garlic cloves, peeled and minced

dried oregano

ground turmeric (if needed, curry powder would be the closest substitute)

cumin

paprika

kosher salt

canned diced tomatoes (fire-roasted are delicious if you can find them)

large eggs

for garnish: fresh parsley or cilantro
