heavy cream + 1/2 cup milk (if you feel too guilty, just 1 cup whole milk)

1/2 cup

blue cheese (or a sharp and creamy cheese like Brie, Camembert) shredded or cut into small cubes

1/2 cup

taleggio (or Fontina, Asiago, Gouda), shredded or cut into small cubes

1/2 cup

Swiss cheese, Emmenthal or Gruyere, shredded or cubed

1/3 cup

Parmigiano, Grana or Parmigianito, freshly grated, plus more for topping
