Slow Cooker Pineapple Chicken

INGREDIENTS

boneless, skinless chicken thighs, or 5 boneless skinless chicken breast but into 1″ pieces

2/3 cup

cornstarch

1/4 tsp

seasoned pepper

1/4 tsp

garlic salt

2 tbsp

vegetable oil

red pepper cut into thin slices

1

green pepper cut into thin slices

1 cup

diced fresh pineapple (optional)

Green onion and sesame seeds to garnish (optional)

1/4 cup

packed light brown sugar

1 can

pineapple juice with pineapple chunks, separated.  Reserve pineapple chunks for last 30 minutes of cooking.

3 tbsp

ketchup

2 cloves

garlic, minced

1 1/2 tbsp

rice wine vinegar

1/3 cup

light soy sauce

1/2 tsp

ginger

Combine 2 Tablespoons cornstarch with 3 Tablespoons of water, mix well to combine.
