Cranberry Citrus Salad with Goat Cheese & Pecans

small heads of lettuce - Red Leaf, Frisee, Bib or Butter lettuce work well, rinsed and torn

1 15 ounce can

mandarin oranges, drained

1 1/2 cups

fresh cranberries (+ 2 Tbsp. sugar and 2 Tbsp. water)

sliced green onions

1/2 cup

candied pecans

1/4 cup

goat cheese crumbles

Dressing:

1/4 cup

olive oil

1/4 cup

balsamic vinegar

2 cloves

garlic, minced

2 tbsp

honey

juice of 1/2 orange (about 1/4 c.)

zest of 1/2 orange (about 1 Tbsp)
