Chicken Mango Lettuce Wraps

ground chicken (I use ground chicken thighs for more flavor)

soy sauce (use gluten-free soy sauce if cooking gluten-free)

1 tsp

corn starch (or potato or rice starch)

1 tsp

cooking oil (a high smoke point oil would be best such as rice bran oil, grapeseed oil, or canola oil)

fresh shiitake mushrooms, sliced

2 tsp

seasoned rice vinegar

1/2 tsp

toasted sesame oil
