coconut oil (or grass-fed butter)

1/4 cup

pumpkin puree

3 tbsp

raw organic honey

1 tsp

organic vanilla extract

1/8 tsp

Himalayan sea salt

1/4 tsp

baking soda

1/2 tsp

pumpkin spice (more to taste)

Optional: 1/4 cup chocolate chips

Optional: additional pumpkin pie spice sprinkled over cookies when cooled (I recommend!)
