sweetened shredded coconut

about 2 1/2 cups quick-cook oats (use Certified Gluten Free Quick Cooking Oats if necessary)

cinnamon

vanilla extract

salt, optional and to taste

semi-sweet chocolate chips, melted for drizzling, optional
