Brown Sugar Strawberries and Cream Tartlets

1 cup

all-purpose flour

2 tbsp

light brown sugar (firmly packed)

1 tbsp

corn starch

1/8 tsp

kosher salt

1/2 cup

well-chilled butter (cut into small pieces)

1/2 tsp

vanilla extract

8 oz

softened Neufchatel cheese

1 cup

mascarpone (8 ounces)

1 cup

half and half (8 ounces)

3 tbsp

light brown sugar (firmly packed)

1/2 tsp

vanilla extract

1 lb

fresh strawberries (about 1 quart, hulled and sliced. If you are making mini tarts, each tart requires about 3 berries.)

Optional: 1 small sprig of fresh thyme per tart.
