Chocolate chip cheesecake cookie bars

For the cookie layer:

unsalted butter, very soft

Morena (unrefined cane sugar) sugar

brown sugar, packed

1/2 tsp

vanilla

1 cup

+ 2 tablespoons flour (I used a blend of ¼ cup all-purpose, ½ cup whole wheat and 6 tablespoons oat flour)

1/2 tsp

baking soda

1/2 tsp

salt

3/4 cup

chocolate chips

For the cheesecake:

8 oz

cream cheese, softened to room temperature*

1/3 cup

Morena sugar (or regular)

large egg

1 tsp

vanilla
