-1 cup cauliflower florets

-1 cup zucchini slices

-1 cup cucumber slices

-1 cup avocado chunks

-1 cup cherry tomatoes

-1 cup corn kernels

-¼ cup green onions

-4 ounces smoked trout

Basic Vinaigrette:

-1 shallot minced

-2 tsp whole grain mustard

-¼ cup red wine vinegar

-¼ cup olive oil

-Kosher salt and black pepper
