grilled vegetables of your choice {I like eggplant, zucchini and bell peppers}

1/2

of an english cucumber, chopped

1/2

of a pint of cherry tomatoes, cut in half

1/4 cup

fresh parsley, chopped

1/4 cup

fresh mint, chopped

1 tbsp

fresh dill, chopped

1/4 cup

extra virgin olive oil

1/4 cup

fresh lemon juice {or 1 lemon juiced}

2 tbsp

red wine vinegar

garlic cloves, minced

1 tsp

spice of your choice {I like sumac or za'atar}
