Recipe: Mexican Style Quinoa Patties

INGREDIENTS

2 1/2 cups

cooked quinoa, cooled

jalapeno, finely chopped

1/3 cup

onion, finely chopped

1 tbsp

cilantro, chopped

1 1/2 tsp

taco seasoning

1/2 cup

shredded cheddar cheese

1/2 cup

gluten-free oats, ground (I used my food processor to ground them)

1/2 tsp

seasoned salt

1 clove

garlic, minced

3/4 cup

canned black beans, drained, rinsed and dried

tomato, finely chopped (cut the tomato in half, scoop out the insides and then chop

egg whites

2 tbsp

vegetable oil plus more if needed
