* 1 package active dry yeast

* 1 cup warm water

* 1 ½ teaspoon rock or Himalayan salt

* 3 ½ -4 cups gluten-free flour, see note and recipe below

* 2 TBLS honey or agave nectar

* 3 TBLS unsalted butter (softened) or olive oil

* ¼ cup cornmeal, optional (for flouring the baking sheet)

* 1 egg white, lightly beaten (optional)

* Poppy or sesame seeds (optional)
