Spanish Lentil Soup with Sausages and Apples

brown or green lentils that hold their shape (I used lentils de puy)

5 cups

water

2 tbsp

Spanish extra virgin olive oil, but not a super pricey one

1 lb

sweet Spanish style chorizo, casing removed and sliced into half moons

1 lb

Morcilla (Spanish style blood sausage), casing removed and either sliced or slightly crumbled

medium onions, chopped

4 cloves

garlic, minced

medium tomatoes, peeled and chopped

1 tsp

sweet smoked Spanish paprika

crisp, sweet apples, such as Fuji, peeled and sliced

salt and pepper

4 cups

chicken stock, plus more as needed

1 tbsp

good quality chicken stock base (such as Minor\'s low sodium)

1/2 cup

Amontillado Sherry

apple cider vinegar, plus more to taste
