-2 cups soy milk (or milk)

-1 cup vegetable broth

-2 Tbsp. Greek yogurt

-2 lb. sharp cheddar, shredded

3/4 cup

Gruyere cheese, shredded

-1/2 cup (2 oz) Parmesan cheese, grated

-1 cup (4 oz) pecorino Romano cheese, grated

-1 1/2 Tbsp. paprika, plus a pinch to sprinkle on top

-1/4 tsp. salt

-1/2 tsp. pepper

-1 lb. Riccioli whole wheat pasta, or other short-cut pasta, such as Fusilli or Penne
