No Bake S'mores Cheesecake (Gluten Free, Dairy Free + Paleo)

coconut oil or ghee (ghee gives a nice buttery flavor)

raw cashews (soaked in cold water for at least four hours or preferably overnight)

full-fat canned coconut milk

coconut oil (melted and cooled (use refined coconut oil if you want no coconut flavor))

1/3 cup

pure maple syrup

dark chocolate (divided (I used 72%))

fresh lemon juice

vanilla extract or ½ teaspoon vanilla bean powder
