The Best Chewy Gluten-free Chocolate Chip Cookies

INGREDIENTS

Egg yolks

2 1/4 cups

All-purpose gluten-free flour blend, good

1 tsp

Baking soda

1 cup

Brown sugar, packed

1 tsp

Salt

2 cups

Semi-sweet chocolate chips

1/2 cup

Sugar

1 1/2 tsp

Vanilla extract

1/2 tsp

Xanthan gum omit if gluten-free flour blend has xanthan or guar gum already

3/4 cup

Butter, unsalted

2 oz

Cream cheese


NOTES

  • Try adding an extra Tbsp of flour. Also, Make more of a log than a ball. This helped them not flatten. I used grandpa’s kitchen flour by weight. I baked at 350 not 375 on parchment paper.
