Zucchini Banana Muffins

ripe banana (brown-spotted), mashed

vanilla (Omit for SCD or use the seeds from 1/2 of a vanilla bean)

1 tbsp

local honey (Optional - I have made these without any honey. However, if you prefer a sweeter muffin, use the honey.)

8 oz

(about 2 cups) of almond flour

2 tbsp

coconut flour

1/4 tsp

sea salt

1/2 tsp

baking soda

2 tsp

cinnamon

1 tsp

apple cider vinegar

heaping cup of shredded zucchini (Place in a clean, dry dish towel and squeeze out as much liquid as possible.)
