No Bake Peanut Butter Cookies

INGREDIENTS

3 cups

Old Fashioned Oats (do not use quick oats)

2 cups

Sugar

1/2 cup

Milk

1/2 cup

Butter

Pinch of Salt

1 cup

Creamy Peanut Butter

1 1/2 tsps

Vanilla


NOTES

  • Tips- Work quickly once the mixture has finished boiling. If you take too long to stir in the peanut butter and vanilla and then pour it over the oats, the mixture will start to dry and your cookies will be very crumbly. I always measure out my peanut butter before I boil the milk mixture. Once you’ve stirred the peanut butter mixture into the oats, let it sit for 3-5 minutes. I like my cookies to be little domes instead of flat. By letting the mixture sit (after you’ve stirred in the oats) it will firm up a bit so that the cookies will hold their shape. Once my cookies have set in the refrigerator, I like to store them in the refrigerator. You don’t have to do this but I just prefer the texture when they are stored in the refrigerator.
