Vanilla Cake with Vanilla Whipped Frosting! (Low Carb & THM S)

INGREDIENTS

1 can

white beans drained (great northern, Must be puréed first!, rinsed and puréed)

eggs

1/2

scoop unsweetened isolated whey protein powder

3/4 cup

Erythritol

3/4 tsp

. Stevia powder

1 1/2 tsp

. Vanilla extract

1/3

packed cup coconut flour

1/3 cup

+ 1 Tbsp coconut oil (Can also use butter in place of oil)

2 tbsp

. Heavy Cream

1/2 tsp

. Baking soda

1 tsp

. Baking powder (aluminum free)

For the Whipped Vanilla Frosting:

egg white (pasteurized for safety since this will be eaten raw- the egg whites in a carton are usually pasturized)

1/4 cup

xylitol (grind it into a powder with a blender or coffee grinder for best results)

1/8 tsp

. Stevia

1/2 tsp

. Xantham gum

1 stick

butter softened (need to be very soft but not melted)

1 tsp

. vanilla extract or clear vanilla imitation extract (will turn frosting an off white color, For a white frosting)

1/2 cup

or more heavy cream
