One Pot Coconut Chicken Curry

olive oil

boneless skinless chicken breast (diced into bite-sized pieces)

large sweet onion (finely diced)

medium zucchini (diced)

1 tbsp

curry powder

1 13.5 ounce can

coconut milk (I used light coconut milk, but the full-fat version works perfectly too)

1 15.5 ounce can

garbanzo beans (drained and rinsed)

Salt (to taste)

Optional for serving: (cooked rice (or cauliflower rice); cilantro or parsley)
