These healthy vegan shortbread style cookies are my new favorite!
2 cups
Almond Flour (I use super fine blanched, not almond meal)
1 tbsp
Flaxmeal (get in that fiber)
¼ tsp Fine Grain Sea Salt
1 tsp
Cinnamon
½ tsp Baking Soda
¼ cup Coconut Oil (Melted) or Vegan Butter (Melted)
¼ cup Pure Maple Syrup
1 1/2 tsp
Pure Vanilla Extract
1 cup
Dairy-Free Chocolate Chips (I used Enjoy Life Foods Mini Chips)
