Chipotle Beef Tostadas

Coleslaw mix or shredded cabbage

1 10 ounce can

Mexican-style diced tomatoes with green chiles

1 15 ounce can

Pinto beans

White onion, large

Zucchini or yellow squash, medium

Kosher salt

Pepper, Freshly ground

Vegetable oil

Tostadas

1 1/2 cups

Cheddar cheese


NOTES

  • We just did as tacos. Cooked until zucchini was nice and tender. So yummy! All the kids loved! They didn’t even notice it was cabbage, they thought it was lettuce and that I tried to trick them. Ha! One son thought it might be good with fresh tomatoes added. Another wanted sour cream to tone down the heat, but no one complained about the spiciness.
