Black Bean Patties with Corn Relish and Avocado Cream Sauce

For the patties:

black beans, drained and rinsed (or 3 cups cooked black beans), divided

roasted red bell peppers, divided*

oregano

cumin

chipotle chile in adobo, minced

medium onion, finely diced

1 cup

cornmeal or panko (plus more, as needed)

Salt and pepper

Canola or vegetable oil

For the corn relish:

2 tsp

canola oil

2 cups

corn kernels

1 clove

garlic, minced

jalapeño, seeded and minced

medium tomato, seeded and diced

Juice of 1 lime

2 tbsp

minced fresh cilantro

Salt and pepper,

For the avocado cream sauce:

avocado, pitted and coarsely chopped

greek yogurt or light sour cream
