vegetable oil (I used ½ cup extra virgin olive oil, ¼ cup grapeseed oil, and ¼ cup unsweetened applesauce)

2 cups

granulated sugar (I used 1 ¾ cup coconut sugar plus ¼ cup granulated sugar)

1 tbsp

vanilla extract

2 cups

shredded, peeled zucchini (about one zucchini, medium sized)

2 1/2 cups

gluten-free flour mix (I use my Two-Ingredient Gluten-Free Flour Mix)

1/2 cup

cocoa powder (or raw cacao powder)

1 1/2 tsp

xanthan gum

1 tsp

salt (I use this sea salt)

1 tsp

baking soda

1 tsp

ground cinnamon

1/4 tsp

baking powder
