granulated sugar, divided

granulated gelatin

4 tbsp

cold water

1 tsp

grated lemon rind ( I used meyer lemon)

1 cup

sugar

egg whites

2 tbsp

water

1 tsp

cream of tartar

1/2 tsp

salt

1 tsp

vanilla extract

Garnish: Fresh passion fruit pulp with seeds
