We've been making this at least weekly since hearing about it from Madeline of Madeline Moves a month ago. They are so good! Sometimes we go the easy route and skip the lemon zest, shallots, and thyme. Salt, pepper, olive oil, and finely grated parmesan are really all you need.
This is on nightly repeat at our house right now. So thankful to Lillie and Madeline (from Madeline Moves) for sharing their recipes for this delicious squash!
