sausage, browned and drained (I used breakfast sausage)

package of frozen potatoes O'Brien (the one with onions and peppers)
1 14 ounce can
of cream style corn
1
large carrot, chopped (I left this out because I don't like cooked carrots- it's up to you.)
3 cups
chicken broth
1 12 ounce can
evaporated milk
1 1/2 cups
cheese, plus more for garnish
1/2 tsp
Salt and 1/2 tsp pepper
Optional topping ideas: Diced Bacon pieces, green onions, cheese, sour cream.
