Coconut flour cookies no sugar - Low Carb Shortbread

2/3 cup

+ 1 tbsp coconut flour

1/3 cup

extra virgin coconut oil (solid, not melted +/- 1 tablespoon (add if the dough is too crumbly))

4 tbsp

sugar free crystal sweetener (- monk fruit sugar or erythritol)

1/4 tsp

vanilla extract

1 tbsp

cashew butter (or any nut butter you like)

1/3 cup

sugar free dark chocolate (I used stevia chocolate)

1 tbsp

pumpkin seeds (crushed)

1 tsp

unsweetened dessiccated coconut

1 tbsp

coconut flour
