Mixed Green Salad with Warm Breaded Goat Cheese Rounds and Balsamic Vinaigrette

INGREDIENTS

mixed leaf greens

small cucumber, sliced in half lengthwise, and cut into small slices

large or 2 small tomatoes, cut into small pieces

to 4 slices of goat cheese about 1/2" thick

egg, beaten with a sprinkle of salt

1/2 cup

breadcrumbs mixed with:

2 pinches

each of thyme, herbes de provence, and parsley (herbes de provence is optional)

salt and pepper

1/2 cup

pecans or walnuts

pat of butter

2 tbsp

sugar

3 tbsp

balsamic vinegar

1 tbsp

dijon mustard

1 clove

garlic, minced

1/2 cup

extra virgin olive oil

salt and pepper to taste (at least 1/4 tsp of salt)
