INGREDIENTS

olive oil 0g carbs

200 g

leek (thinly sliced - 13.6g carbs (internet resources show very different carb counts for leeks. However, I took my carb count directly from the Atkins phase 1 page).)

100 g

mushrooms (thinly sliced 3.6g carbs)

1 clove

garlic (chopped 0.9g carbs)

2 tbsp

double cream - you can have a little cream on Atkins phase 1 - supposedly just for beverages - ....so I may have taken advantage

60 g

cheddar grated 0.8g carbs

1 pinch

black pepper

1 tbsp

fresh parsley (chopped 0.1g carbs)
