Bacon Gorgonzola Stuffed Baby Red Potatoes. - How Sweet Eats

INGREDIENTS

I washed some baby red potatoes and peeled off the yucky parts.

If my food has one bruise or spot on it, it has to come off before I can eat it. I’m picky that way.

I took a tiny slice off the bottom so the potatoes could stand on their own.

I also sliced a bit of the top off. After a few fork-pokes, they went into the oven.

Once they were baked, I went around the top with a knife and scoop out the potato.

My favorite part. Mashing the potatoes with some butter, gorgonzola, and parmesan.

It is very hard to resist eating it straight out of the bowl. Especially when you’re a gorgonzola addict like myself.

About half of each potato was scooped out to make room for the stuffing.

Aren’t they just adorable?

In went the mashed potato-gorgonzola mixture.

I sprinkled a bit more gorgonzola on top because I have no restraint for added effect.

It makes it even more tasty.

I fried up some bacon, which is extremly hard to photograph mid-fry. I don’t care for the splashing bacon grease all over my camera.

However, I do love bacon grease in every other aspect. I remember Mother Lovett having a disgusting jar of gray sludge in her refrigerator when I was younger.

I saw that same jar in my mom’s refrigerator, too.

I wondered, What could it be?

Little did I know a few years later I would discover the amazing and delicious qualities of bacon grease.

Don’t hate. Appreciate.

I topped the potatoes with some crumbled bacon then threw them into the oven for a few more minutes.

They make the perfect appetizer.

heavy cream
