xanthan gum (omit if your blend already contains it)

1/2 cup

unsweetened natural cocoa powder

1/4 tsp

kosher salt

baking soda

6 tbsp

packed light brown sugar

1/2 cup

fat-free plain Greek yogurt, slightly warmed

6 tbsp

unsweetened smooth applesauce, slightly warmed

1 tbsp

neutral oil (like grapeseed, sunflower, vegetable, canola)

eggs (100 g, weighed out of shell) + 1 egg yolk, at room temperature, beaten

1/2 tsp

pure vanilla extract
