Spicy Potato Taco Plate

large sweet potatoes, peeled and diced

large russet potatoes, diced

sea salt

1/2 tsp

pepper

garlic powder

2/3 cup

extra virgin olive oil

1 cup

diced red onion (use yellow onion for less of a spicy flavor)

large cloves of garlic, minced or finely diced

Hungarian wax peppers, diced (use bell peppers for less of a spicy flavor)

2 15 ounce cans

black beans, drained and rinsed

2 1/2 tsp

cumin

1/2 tsp

smoked paprika

1 tsp

chili powder

Salt and pepper to taste (I used about 1 teaspoon sea salt and 1/2 teaspoon pepper)

green onions for topping

raw red onion for topping

cilantro for topping
