vegan cheese shreds, to taste (I like cheddar, but a combo of cheddar and jack works great too)

DIY Sour Cream:
1 1/2 cups
raw cashews, soaked overnight and drained
1 cup
water, as needed to blend

small lemon or lime, juiced
sea salt to taste (at least 1/4 tsp)**
