Curried Chicken Salad with Cashews (Paleo, Whole30)

olive oil

1 tsp

salt

1 tsp

pepper

1 cup

whole30 & paleo mayonnaise (add more if needed)

1 cup

roasted cashews, chopped

3/4 cup

shredded carrots

1/2 cup

scallions, chopped

1/2 cup

raisins

2 tbsp

lime juice (from about 1/2 a lime)

2 tbsp

honey (leave out for Whole30)

1 tbsp

curry powder (or more to taste)

1 tsp

salt (or more to taste)
