Chicken, Broccoli, and Red Bell Pepper Salad with Peanut Butter Dressing

grapeseed oil (or other neutral-flavored oil)

1/2 cup

natural peanut butter without sugar (I use Adams 100% Natural Peanut Butter; see notes)

3 tbsp

soy sauce (gluten-free if needed)

2 tbsp

fresh-squeezed lime juice

1 tbsp

ground ginger root (not dried ginger)

1 tsp

crushed or minced garlic

1/3 cup

water

2 cups

shredded chicken (Poach 2 boneless, skinless chicken breasts or use leftover rotisserie chicken)

broccoli, cut into small bite-sized pieces (about 5-6 cups of broccoli pieces)
